Change is on the way at the Hob Knob Inn and Restaurant on Mountain Road in Stowe.
Kate Laster and her husband, Rick, are buying the Hob Knob from Laster’s parents. The restaurant usually closes in the shoulder season between fall and winter, and Laster says the building and the business will go through some renovations in the next five weeks.
“We’ll be reopening in December as a family-friendly apres-ski restaurant,” she said. The restaurant will be open from 4 to 8 p.m.
“After you’re done skiing, you can come hang out by the fire, play some checkers or foosball and relax,” she said.
The couple have two children, ages 3 and 5, and understand the importance of casual family dining. “We want it to be a place where people can hang out and be a family,” Laster said. The restaurant will also have a 65-inch flat-screen TV for people to take in the Sunday game.
Rick, who has been a chef at Stowe Mountain Lodge, plans to quit and be the Hob Knob chef, serving what he calls “man small plates.” The menu will change, depending on what Rick is making.
“It’ll be a short menu, and it won’t be the same every day. Rick can change it up,” Kate said, although she said her husband makes a mean pulled-pork taco and has a definite way with shrimp.
“He’s going to get creative with it,” said Kate. “The next five weekends will stay the same,” but after that, Hob Knob will have a different look.
