Waterbury restaurateur Eric Warnstedt plans to expand his business — to Burlington.

Warnstedt owns and operates the highly regarded Hen of the Wood in Waterbury. He told the Burlington Free Press Tuesday that he plans to open a second restaurant next year at Hotel Vermont, a 128-room hotel scheduled for completion in 2012 in downtown Burlington.

Warnstedt said he plans to operate both restaurants. The Burlington restaurant will have the same focus on locally foods as Hen of the Wood, but will have a bar and lounge and more options for smaller dishes.

The new Hen of the Wood would seat 80 to 100, about twice as many as the Waterbury restaurant.

Burlington officials said the developer, Westport Hospitality, has received a zoning permit for the new Hotel Vermont and is in the final stages of obtaining a building permit.
